If you muddle the leaves too aggressively, they can become bitter and muddy the flavor of your cocktail. Gently press down on the leaves just enough to release their oils.

- Replace the tequila/vodka with a non-alcoholic spirit like RITUAL zero proof Tequila or Seedlip.
- Replace the limoncello with oleo saccarum**, more lemon juice, or lemonade.
- How to make oleo saccarum. Use a vegetable peeler to remove the peel of a lemon, making sure to avoid the bitter white pith. Place the lemon peel in a sealable jar or container and add an equal amount of sugar. Seal the container and shake it vigorously for a few minutes to coat the peels in sugar. Leave the container to sit at room temperature for at least 6 hours, but ideally overnight. The sugar will draw out the essential oils from the citrus peels, creating a fragrant and flavorful syrup. Strain the mixture through a fine mesh sieve to remove the citrus peels and any solids. Transfer the liquid to a clean jar or container and store in the fridge for up to a week.
- Spice up the selzter component by using Poppi (my favorite flavor is the Ginger Lime) or Recess (my favorite flavor is the Lime Citrus).
- Don’t forget to still serve the cocktail up in a fancy glass!

Ingredients:
- 1 cup of honey
- 1 cup of water
Instructions:
- In a saucepan, combine the honey and water.
- Place the saucepan over medium heat and bring the mixture to a simmer.
- Time Saving Hack. If you (like me) don’t want to create extra dishes or simply do not have the time to boil the simple syrup, you can skip the stovetop and place the honey and water mixture in the microwave! Just place it in a safe container and microwave for about 1-2 minutes.
- Stir the mixture until the honey has dissolved completely.
- Once the honey has dissolved, remove the saucepan from the heat and let it cool.
- Once the syrup has cooled, transfer it to a container with a lid. You can store it in the fridge for up to two weeks.
Using honey in place of sugar adds a depth of flavor and a unique sweetness to your cocktails. Plus, honey is a natural sweetener that has some potential health benefits.
Summer Lemon Cocktail Recipe
Ingredients
- 3 oz Tequila or Vodka (whichever you prefer)
- 2 oz Limoncello
- 2 oz Lemon Juice
- 2 oz Honey Simple Syrup (instructions on how to make are above)
- 6-8 oz Seltzer or Sparkling Water (I use plain, lemon, or lime flavored)
- Fresh Mint
Instructions
- Place about 10 mint leaves in the bottom of a pitcher that holds at least 10 oz of liquid. Lightly crush/muddle the mint leaves until aromatic (if you don't have a muddler you can use the handle of a wooden/silicone spoon).
- Add the tequila (or vodka), limoncello, lemon juice, honey simple syrup and stir until well combined.
- Strain into a glass filled with ice. Top with the seltzer/sparkling water.
